Golden Yolk Lemon Curd

Recipe:
Ingredients:

  • 4 egg yolks

  • 100g caster sugar

  • 50g unsalted butter

  • Zest and juice of 2 unwaxed lemons

Method:

  1. In a heatproof bowl, whisk yolks and sugar until combined.

  2. Add lemon zest, juice, and butter.

  3. Place bowl over a pan of gently simmering water (don’t let bowl touch water).

  4. Stir constantly for 10–15 minutes, until thickened.

  5. Pour into sterilised jars and cool.

Farm Tip:
Our deep golden yolks make this curd extra vibrant. Spread thickly and enjoy!
