Ingredients:

4 egg yolks

100g caster sugar

50g unsalted butter

Zest and juice of 2 unwaxed lemons
Method:

In a heatproof bowl, whisk yolks and sugar until combined.

Add lemon zest, juice, and butter.

Place bowl over a pan of gently simmering water (don’t let bowl touch water).

Stir constantly for 10–15 minutes, until thickened.

Pour into sterilised jars and cool.
